History of Pu'er.

Pu-erh tea is a large-leaf tea from Yunnan Province, China, known as aer tea. For centuries, Pu-erh tea has been used in China as a form of currency and an important international trade item. Pu-erh tea was once known among the Northern First Nations in northern Canada, who traded it across the Bering Strait.

Pu'er tea gets its name from the market town where Pu'er tea was originally processed and sold, but it grows in the Nuoshan Mountains. It is said that the unique taste of Pu-erh tea is due to the weeks it takes to transport the tea leaves to the town by horses for processing. During this transportation process, the tea leaves begin to ferment in a humid environment, exuding a rich aroma that is pleasing to the eye. A special tea fermentation technique was developed, resulting in the creation of Pu-erh tea.

The secret to making Pu-erh tea has been closely guarded in China for centuries. The tea leaves are collected from growers of a special type of broadleaf tea tree, which is said to be related to ancient prehistoric tea trees. The leaves undergo two types of fermentation which give this tea its unique character; a mild but distinct earthy flavour. Pu-erh tea is much like fine wine, becoming smoother and more balanced over time. Due to the special processing method of Pu'er tea, the tannin content is much lower than that of other teas.
