Overview
Glutamine transaminase, also known as transglutaminase (TG for short), widely exists in humans, higher animals, plants and microorganisms, and can catalyze the cross-linking between or within protein molecules, as well as the connection between proteins and amino acids, And hydrolyze glutamine residues in protein molecules, it is a healthy, efficient and safe food additive. Our TG enzymes are fermented by Streptococcus mobara. It has a significant impact on the foaming, emulsification stability, thermal stability, water retention and gelation ability of proteins, thereby improving the nutritional value, flavor, taste, texture, appearance, etc. of food.

The use of TG enzyme depends on the formula and production process of the food, please confirm it through experiments before use. For food company applications, we recommend BTG-600 (use amount: 200-600ppm), and for professional food additive compound company applications, we recommend high enzymatic activity product BTG-H2000 (use amount: 50-200ppm).
