Green coffee stored in our bonded warehouses is shipped to partner companies to be processed to our standards.
bake
It is the most delicate production process and determines the "taste of coffee" more than any other. After careful analysis of the various partner companies, Caffè Pompeii chose for this process a slow-cycle, flexible and fully automatic roasting plant, in order to optimize the caramelization of the sugar and the development of the aromas of each coffee origin.
Each coffee origin has its own characteristics: In order to roast every coffee bean, we choose a single origin to roast, and then mix the aroma and taste of different origins, all of which are fully seasoned.

mixing and packaging
After the roasting and further cleaning stages, the coffee ages in silos for several days. It is then blended according to a recipe drawn up by the "Master Taster" before being sent for milling and packaging.
