Jellyfish are bell-shaped sea animals found in oceans around the world.

Large and brightly colored, they are known for their gelatinous bodies and long tentacles containing specialized stinging cells that shoot rapidly to inject venom into predators and prey. While some jellyfish are poisonous to humans, others are safe to eat. In fact, jellyfish are very common in Southeast Asia due to the belief that it has various health benefits.

Eating jellyfish safely Before consuming jellyfish, it is important to understand how to eat jellyfish safely. At least 11 species of jellyfish have been determined to be edible by humans, including Rhopilema esculentum, which is endemic in Southeast Asia. Since jellyfish deteriorate quickly at room temperature, it is important to clean and dispose of them as soon as possible after capture. Traditionally, jellyfish are preserved by dehydrating the meat using an alum-salt mixture. Alum is a brine ingredient that acts as a preservative and lowers the pH while maintaining a firm texture. A study aimed at gathering safety and quality parameters for edible jellyfish found that jellyfish cleaned and processed using conventional methods showed little sign of contamination with bacteria or other potentially dangerous pathogens. Therefore, it is very important to only consume jellyfish products that have been thoroughly cleaned and properly processed. Another important factor for safety is the color of the product. Freshly processed jellyfish are usually milky white and slowly turn yellow over time. While yellow products are still safe to eat, those that have turned brown are considered spoiled and unsafe to eat.
