Soy sauce is a condiment made from soybeans. Vietnamese soy sauce is widely used to enhance the flavor of many traditional dishes such as noodles, pasta. In Vietnam, soy sauce is mainly divided into three types, and the label description is as follows:
Standard, not described or described as thanh vi, meaning light. This is a favorite because it can be poured directly into dishes and has a mild flavor.
The dark, thick and concentrated variety is called dam dac or hao vi. This type of sauce is too thick to use straight away, so it's often used as a base for dipping sauces with water or vinegar.

Naturally Brewed Soy Sauce:
Soya or a mixture of soybeans and grains fermented or brewed by Aspergillus oryzae and/or Aspergillus sojae: bacteria and/or molds and/or yeasts with added salt and/or without added sweetener.
Non-brewed soy sauce: Hydrolyzed soy sauce:
Acid hydrolysis or enzymatic hydrolysis of salted and sweetened/unsweetened soybeans and/or defatted soybeans, defatted peanuts.
mixed soy sauce
Combines fermentation and acid/enzymatic hydrolysis of soybeans or a blend of soybeans and grains.
